Ingredients

  •  anjou pear 
  • quarts apple juice 
  •  apples 
  •  cinnamon sticks (each 3 inches long)
  • large piece candied ginger 
  •  optional: lemon halved

Directions

  1. Fill a large, heavy pot with apple juice. Tie the cinnamonsticks, ginger, and cloves together in a cheeseclothbag with kitchen string and add to the juice. Bring toa boil; reduce the heat to medium-low and simmer 15minutes, partially covered, to infuse flavors.
  2. Meanwhile, squeeze the lemon into a large bowl andfill with water. Core the apples and pears from the bottomand peel them. Drop immediately into the lemonwater (to prevent browning) until poaching time.
  3. Carefully add apples to the boiling poaching liquid,reduce heat, and simmer until tender, 15 to 20 minutes.
  4. Remove to a bowl.
  5. Add the pears to the liquid and poachuntil tender, about 8 minutes.
  6. Remove to a bowl.
  7. Cool the poaching liquid to room temperature anddiscard spice bag. Return fruit to the liquid and refrigerateovernight.
  8. To serve, place the fruit, stem-ends up, on a cake standor platter. Strain some of the liquid over the fruit.
  9. Per serving: 320 calories, 79g carbohydrates, 1g protein,no fat or cholesterol.
