Ingredients

  • 0.5 cup celery finely chopped ( 1 rib)
  • 14.3 ounce low-salt beef broth canned
  • ounce mushrooms sliced
  • 0.8 cup onion frozen thawed chopped
  • 0.3 teaspoon pepper 
  • cup quick-cooking barley uncooked
  • 0.3 teaspoon salt 
  • tablespoon worcestershire sauce low-sodium

Directions

  1. Combine first 4 ingredients in a medium saucepan; bring to a boil.
  2. Add barley; cover, reduce heat, and simmer 10 minutes.
  3. Remove from heat; let stand 5 minutes.
  4. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
  5. Add mushrooms, onion, and celery; cook 3 minutes or until tender, stirring often. Stir into cooked barley.
