Ingredients

  • tablespoon no-salt-added beef broth undiluted canned
  • 0.3 cup mushrooms fresh chopped
  • teaspoon parsley fresh chopped
  • teaspoon garlic minced
  • tablespoons grits uncooked
  • 0.3 teaspoon hot sauce 
  • teaspoon juice of lemon fresh
  • ounce cheddar cheese shredded reduced-fat
  • 0.1 teaspoon salt

Directions

  1. Cook grits in a small saucepan according to package directions, omitting salt and fat.
  2. Add cheese, stirring until cheese melts. Cover and keep warm.
  3. Coat a small nonstick skillet with cooking spray; place over medium heat until hot.
  4. Add mushrooms; saute 2 minutes.
  5. Add garlic; saute 1 minute.
  6. Remove from heat. Stir in beef broth and remaining ingredients.
  7. Add mushroom mixture to grits, stirring well.
  8. Serve immediately.
