Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • tablespoon butter 
  • 1.5 pounds button mushrooms thick sliced
  • cups chicken broth 
  • teaspoon thyme leaves fresh minced
  • cloves garlic minced
  • cup heavy cream 
  • 0.5 teaspoon kosher salt 
  • 0.5 teaspoon lemon zest 
  • small onion diced
  • 0.5 cup white wine

Directions

  1. Melt the butter over medium heat in a heavy skillet.
  2. Add the onion and garlic and saut until translucent, about 4 minutes.
  3. Add the mushrooms and cook until they release their liquid and begin to brown, about 10 minutes.
  4. Add the thyme, zest, and wine; simmer until the liquid is reduced by half, about 5 minutes.
  5. Add the broth, bring to a boil, and simmer 5 minutes. Stir in the cream, salt, and pepper. Simmer until the sauce lightly coats the back of a spoon.
