Ingredients

  • cup celery leaves divided
  • 0.3 cup cooking wine dry white
  •  fennel bulb trimmed thinly sliced cut into 1" cubes or
  • servings kosher salt and pepper black freshly ground
  • pounds mussels scrubbed
  • 0.3 cup butter unsalted cut into 1/2" pieces ()
  • cup verjus white (or)

Directions

  1. Heat a large heavy pot over high heat untilvery hot.
  2. Add mussels, fennel, verjus, andwine. Cover and cook, stirring frequently,until mussels fully open (discard any that donot open). Using a slotted spoon, transfermussels and fennel to a serving platter.
  3. Simmer liquid in pot for 1 minute; whiskin butter and 1/2 cup lovage leaves. Seasonto taste with salt and pepper (and additionalvinegar if using grape juice). Spoonover mussels, leaving any sediment behind.
  4. Garnish mussels with remaining 1/2 cuplovage leaves and serve immediately.
