Discover the ultimate comfort food that seamlessly blends the briny richness of the ocean with the earthy sweetness of roasted potatoes. This Mussels With Potatoes and Olives recipe is a culinary triumph, earning a perfect health score of 100 while remaining incredibly quick to prepare in just 40 minutes. It is a vibrant, gluten-free, and dairy-free dish that delivers a robust Mediterranean flavor profile without compromising on nutritional value, packing only 324 calories per serving to satisfy your hunger at lunch or dinner.

The magic of this dish lies in its harmonious balance of textures and spices. Tender Yukon gold potatoes are first par-cooked in the microwave to ensure they become perfectly soft, then tossed with aromatic allspice, cayenne, and paprika to build a deep, savory foundation. As the onions and garlic caramelize in extra-virgin olive oil, they create a fragrant base that infuses every bite with warmth. When the succulent mussels are added along with halved green olives and fresh parsley, the flavors explode in a steamy, aromatic broth that clings to every chunk of potato and shell.

What makes this recipe truly special is its simplicity and versatility. It requires no exotic ingredients, yet the combination of diced tomatoes, garlic, and a hint of heat from the cayenne pepper transforms basic staples into a gourmet experience. The final result is a hearty main course that feels luxurious yet wholesome, offering a satisfying mix of protein, healthy fats, and complex carbohydrates. Whether you are a seafood lover looking for a new favorite or a health-conscious eater seeking a delicious meal that checks all the boxes, this dish is an absolute must-try. Prepare to be captivated by the symphony of flavors that come together in a single, steaming pot.

  • cloves garlic sliced
  • 0.7 cup olives green pitted halved
  • servings kosher salt
  • 2.3 pounds mussels scrubbed
  • tablespoons olive oil extra-virgin
  • medium onion sliced
  • 0.5 teaspoon paprika
  • large yukon gold potatoes cut into 1-inch chunks

Equipment

  • bowl
  • pot
  • plastic wrap
  • microwave
  • dutch oven

Directions

  1. Put the potatoes in a large microwave-safe bowl and cover with water by about 1/4 inch. Cover with plastic wrap and microwave until just tender, about 6 minutes; drain.
  2. Meanwhile, heat the olive oil in a large Dutch oven or wide pot over medium-high heat.
  3. Add the onion and garlic and cook until soft and golden brown, 5 to 6 minutes.
  4. Add the potatoes, paprika, allspice, cayenne and 1 1/2 teaspoons salt; stir until the potatoes are coated with the spices and begin to soften, 2 to 3 minutes. Stir in 1 cup water and the tomatoes, scraping up any browned bits from the bottom of the pot. Bring to a simmer, cover and cook until the potatoes are tender, about 10 minutes.
  5. Stir in the mussels, olives and parsley. Cover and cook until the mussels open, 4 to 5 minutes. (Discard any that do not open.)
