Ingredients

  • tablespoon celery minced
  • cup cooking wine dry white
  • tablespoons chives fresh minced
  • tablespoon cilantro leaves fresh minced
  • tablespoon parsley fresh minced
  •  optional: lemon sliced
  • slices garnish: lemon 
  • 0.3 teaspoon juice of lemon fresh
  • 0.3 cup mayonnaise 
  • pounds mussels cleaned
  • tablespoon oregano fresh minced
  • 0.5 teaspoon pepper freshly ground
  • cup water

Directions

  1. Bring first 3 ingredients to a boil; add mussels. Cover and cook 5 minutes; stir gently, and cook 5 more minutes or until mussels open.
  2. Remove from heat; drain and let cool. Discard any mussels that remain closed. Detach mussels from shells, reserving shells.
  3. Combine mayonnaise and next 7 ingredients in a small bowl.
  4. Place each mussel in a shell; spoon 1 teaspoon Salsa Verde over each mussel.
  5. Place mussels on a platter, and garnish, if desired.
