  • teaspoons dijon mustard 
  • 0.3 teaspoon thyme leaves dried
  •  garlic cloves minced
  • 20 ounce lamb loin chops lean
  • teaspoons juice of lemon fresh
  • teaspoon olive oil 
  • 0.5 teaspoon pepper 
  • 0.1 teaspoon salt

Directions

  1. Combine garlic, pepper, thyme, and salt in a small bowl; mash with back of a spoon until mixture forms a paste. Stir in lemon juice, mustard, and olive oil.
  2. Preheat broiler.
  3. Trim fat from chops.
  4. Spread garlic mixture over both sides of chops.
  5. Place chops on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat 6 to 7 minutes on each side or to desired degree of doneness.
