- 1 cup beets diced canned drained
- 0.3 teaspoon pepper black
- 1 garlic clove minced
- 1 teaspoon olive oil
- 1 cup onion diced
- 3 cups potatoes diced red peeled
- 3 tablespoons cup heavy whipping cream fat-free sour
- 0.8 pound turkey breast smoked diced
- 3 tablespoons water
- 3 tablespoons whole-grain mustard (such as Maille Dijon a l'Ancienne)
- 2 teaspoons or dried fresh minced

- Heat the olive oil in a large nonstick skillet over medium-high heat.
- Add the diced onion, and saut 5 minutes.
- Add diced potato, black pepper, and minced garlic, and cook 15 minutes, stirring frequently.
- Add diced beets, and saut 5 minutes.
- Add smoked turkey breast, and saut 1 minute.
- Combine the water, sour cream, mustard, and thyme, and stir into turkey mixture.
- Remove from heat; cover and let stand 3 minutes.
