  • cup beets diced canned drained
  • 0.3 teaspoon pepper black
  •  garlic clove minced
  • teaspoon olive oil 
  • cup onion diced
  • cups potatoes diced red peeled
  • tablespoons cup heavy whipping cream fat-free sour
  • 0.8 pound turkey breast smoked diced
  • tablespoons water 
  • tablespoons whole-grain mustard (such as Maille Dijon a l'Ancienne)
  • teaspoons or dried fresh minced

Equipment

Directions

  1. Heat the olive oil in a large nonstick skillet over medium-high heat.
  2. Add the diced onion, and saut 5 minutes.
  3. Add diced potato, black pepper, and minced garlic, and cook 15 minutes, stirring frequently.
  4. Add diced beets, and saut 5 minutes.
  5. Add smoked turkey breast, and saut 1 minute.
  6. Combine the water, sour cream, mustard, and thyme, and stir into turkey mixture.
  7. Remove from heat; cover and let stand 3 minutes.
