Get ready to elevate your side dish game with my Mom's famous Twice Baked Potato Boats, now with a fancy, gluten-free twist! These aren't your average potatoes; think creamy, dreamy mashed potato filling infused with the rich, nutty flavor of Gruyere cheese, a hint of nutmeg, and the fresh bite of chives.

What sets these apart? We take the humble baked potato and transform it into elegant little vessels of deliciousness. Imagine scooping out the fluffy insides, whipping them into a light and airy cloud with tangy sour cream and those perfectly balanced seasonings.

But the real magic happens when we pipe that cloud back into the crispy potato skins, creating a beautiful swirl that hints at the delectable experience to come. A final bake in the oven turns the peaks golden brown, delivering a warm, comforting, and visually stunning side that’s perfect for any occasion. With just over two hours from start to finish (mostly hands-off baking time!), and delivering only 294 calories per boat, these are a treat you can actually feel good about!

These "Fancy" Twice Baked Potato Boats are a guaranteed crowd-pleaser, and the gluten-free nature, they are easily adaptable to most dietary needs. So grab your potatoes, preheat that oven, and prepare to taste a classic comfort food reimagined!
