  • pound beef chuck boneless trimmed
  • 14 ounce beef broth canned
  • 29 ounce chili-seasoned tomatoes diced canned
  • teaspoon chili powder 
  • cup hot-brewed coffee cold
  • cloves garlic chopped
  • ounce chiles diced green canned
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon ground pepper black
  • 0.5 teaspoon salt 
  • large onion yellow sliced into thin rings

Directions

  1. Layer half the onion rings into the bottom of a slow cooker.
  2. Place chuck roast on top of onions.
  3. Pour diced tomatoes, beef broth, and coffee into the cooker over the roast; stir in diced green chiles, jalapeno peppers, garlic, chili powder, cumin, salt, and black pepper.
  4. Spread remaining onion rings over the mixture.
  5. Cover the cooker and cook on Low until beef is very tender, 6 to 10 hours.
  6. Transfer chuck roast to a bowl and shred meat. Return meat to sauce.
  7. Remove onions and serve with meat.
