Are you searching for a delightful dessert that perfectly balances indulgence with dietary restrictions? Look no further than these exquisite Nondairy Kosher Meringues, a treat that is naturally vegetarian, gluten-free, and dairy-free, making them an ideal choice for almost any gathering. With a remarkably low FODMAP profile, they are also gentle on sensitive digestive systems, ensuring everyone at your table can enjoy a sweet moment without worry. Despite being free of heavy creams or dairy, these meringues deliver a light, airy texture and a subtle sweetness that feels sophisticated yet comforting.

What makes these confections truly special is their simplicity and the joy of watching them transform in the oven. Using just three main ingredients—egg whites, sugar, and a touch of cream of tartar—you can create eight perfect, bowl-shaped rounds that crisp up beautifully. The process is therapeutic, involving the careful folding of air into egg whites until they form stiff, shiny peaks that hold their shape like clouds. Once piped onto baking sheets, they bake slowly over about an hour and a half, developing a hollow sound when tapped and a firm exterior that contrasts with a tender interior.

The real magic happens after baking, when you leave the meringues in the turned-off oven to cool completely. This crucial step ensures they remain crisp for days, allowing you to prepare them ahead of time and store them airtight at room temperature until needed. Whether you serve them as a standalone side dish or fill them with your favorite low-FODMAP fruits and fillings, these meringues offer a versatile canvas for creativity. At only 105 calories per serving, they prove that delicious food doesn't have to be heavy, inviting you to savor every bite of this elegant, guilt-free delight.

Ingredients

  • 0.5 teaspoon cream of tartar
  • 0.5 cup pasteurized egg whites refrigerated
  • cup sugar

Equipment

  • bowl
  • baking sheet
  • oven
  • whisk
  • blender
  • spatula

Directions

  1. Preheat oven to 22
  2. In a large bowl, with a mixer (preferably fitted with whisk attachment) on high speed, beat egg whites and cream of tartar until foamy. Gradually add 1 cup sugar, about 1 tbsp. at a time, beating well after each addition and scraping sides of bowl occasionally, until stiff, shiny peaks form (see tip 2 below).
  3. Line 2 baking sheets with baking parchment. Mound meringue in 8 equal portions (a scant 1/2 cup for each) on sheets, spacing at least 3 in. apart. Shape each into a 4-in. bowl-shaped round (follow tip 3 below).
  4. Bake meringues until they sound hollow when tapped and feel firm to the touch, about 1 1/2 hours; switch sheet positions halfway through baking. Turn heat off and leave meringues in closed oven until completely cool, 2 to 2 1/2 hours longer.
  5. Remove from sheets.
  6. Set meringues on plates and fill as you like.
  7. Make ahead: Up to 1 day; cool completely, then wrap airtight and store at room temperature.
  8. A whisk attachment introduces air evenly into whites and creates small bubbles, which are both stronger and more flexible than larger ones. Make sure the bowl and beaters are clean; any fat can interfere with the formation of the foam.
  9. Beating the whites with an acid, like cream of tartar or vinegar, helps coagulate the egg-white protein. You want stiff, shiny peaks. The mixture should feel smooth when you rub it between your fingers.
  10. Shape meringue mixture into bowl-shaped rounds with a small, thin spatula. The edges should be a little higher than the centers.
