Ingredients

  • 56 ounce canned tomatoes whole peeled canned (see note above)
  • tablespoons dijon mustard 
  • tablespoons horseradish freshly grated
  • teaspoons hot sauce 
  • servings pepper black freshly ground
  • 0.5 cup juice of lemon fresh
  • tablespoons juice of lime fresh
  • tablespoons worcestershire sauce

Directions

  1. Place tomatoes and their juice in a medium saucepan. Bring to a simmer over medium heat, then reduce heat to low. Cover partially with a lid and cook, stirring occasionally, until reduced by about 1/3, about 4 hours.
  2. Add horseradish, then transfer to a blender and puree until smooth.
  3. Let cool.
  4. Combine tomato base with lemon juice, lime juice, Worcestershire, Dijon, and hot sauce. Season to taste with salt and lots of black pepper. Refrigerate until ready to use.
