Ingredients

  • 100 servings almonds sliced
  • 1.5 teaspoons baking soda 
  • 100 servings glaze 
  • 2.3 cups firmly brown sugar packed
  • cup candied citron diced
  •  eggs beaten
  • 8.3 cups flour all-purpose
  • 1.5 teaspoons ground allspice 
  • tablespoon ground cinnamon 
  • teaspoon ground cloves 
  • 1.5 teaspoons ground nutmeg 
  • cups honey 
  • tablespoons juice of lemon 
  • tablespoon lemon rind grated
  • cup pecans chopped

Directions

  1. Bring honey to a boil in a large Dutch oven; remove from heat, and cool slightly. Stir in sugar, beaten eggs, lemon rind, and juice.
  2. Combine dry ingredients; gradually add to honey mixture, stirring well. Stir in citron and pecans. Cover mixture and chill overnight.
  3. Shape into 1-inch balls; place 2 inches apart on greased cookie sheets. Dip bottom of a glass in cool water, and gently press balls to 1/4-inch thickness. Press an almond slice in center of each cookie.
  4. Bake at 400 for 10 minutes.
  5. Remove cookie sheets from oven.
  6. Brush glaze on cookies, and cool completely on wire racks. Store cookies in airtight containers.
