Ingredients

  • teaspoons baking soda 
  •  eggs 
  • 2.5 cups flour all-purpose
  • teaspoon ground cinnamon 
  • cup brown sugar light packed
  • cups rolled oats 
  • cup pecans coarsely chopped
  • cup raisins 
  • teaspoon salt 
  • cup shortening 
  • cup sugar 
  • teaspoon vanilla extract

Directions

  1. In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla.
  2. Combine the flour, baking soda, salt and cinnamon.
  3. Add to creamed mixture, just until combined. Stir in the oats, raisins and pecans if desired.
  4. Shape into 1-in. balls.
  5. Place 2 in. apart on ungreased baking sheets. Flatten with a greased glass bottom.
  6. Bake at 350° for 10-11 minutes or until golden brown. Do not overbake.
  7. Remove to a wire rack to cool.
