  • tablespoons cranberries dried
  • 0.3 cup olive oil extra-virgin
  • 1.8 cups onion chopped
  • tablespoons sugar 
  • 0.5 cup water 
  • 0.5 cup citrus champagne vinegar 
  • teaspoon mustard seeds yellow

Directions

  1. Heat oil in heavy medium saucepan overmedium heat.
  2. Add onion and sautéuntilbeginning to soften (do not brown), stirringfrequently, about 8 minutes.
  3. Add 1/2 cupwater, sugar, cranberries, and mustard seeds.Cook until almost all liquid is absorbed,stirring often, about 8 minutes.
  4. Add vinegarand simmer until marmalade is thick, stirringoften, 7 to 8 minutes. Season to taste withsalt and pepper. Cool. DO AHEAD: Can be made1 week ahead. Cover and chill.
