Ingredients

  • tablespoon chipotle sauce canned chopped
  •  garlic clove minced
  • teaspoons ground cumin 
  • teaspoons pepper black
  • 3.5 pound leg of lamb boneless trimmed cut into 1 1/4- to 1 1/2-inch cubes
  • 0.3 cup juice of lime fresh
  • teaspoons lime zest grated
  • 0.5 cup olive oil 
  • 0.8 cup orange juice 
  • tablespoon oregano fresh chopped
  •  pepper flakes fresh seeded cut into 1-inch pieces
  •  onion red cut into 1-inch pieces
  • teaspoon salt 
  • 0.3 cup soya sauce

Directions

  1. Place lamb cubes in large resealable plastic bag.
  2. Whisk orange juice and next 10 ingredients in medium bowl to blend.
  3. Pour over lamb in plastic bag. Seal bag and refrigerate overnight, turning occasionally.
  4. Drain lamb.
  5. Prepare barbecue (medium-high heat). Alternate 4 lamb cubes, 4 onion pieces, and 4 chili pieces on each skewer. Grill lamb to desired doneness, turning frequently, about 9 minutes for medium-rare.
  6. Place skewers on platter and serve.
