  • tablespoon ginger fresh grated
  • pounds pacific halibut filets 
  • large leek trimmed cut into thin strips
  • 0.3 cup mirin 
  • 0.3 cup orange juice fresh
  • teaspoons orange rind grated
  • small bell pepper red thinly sliced
  • 0.5 teaspoon salt divided
  • 0.5 pound snow peas fresh trimmed
  • teaspoon tamari sauce 
  • teaspoons vegetable oil

Directions

  1. Preheat oven to 42
  2. Heat oil in a large skillet over medium-high heat.
  3. Add leek and red pepper; cook, stirring constantly, 2 minutes.
  4. Add snow peas and 1/4 teaspoon salt; cook over medium heat 1 minute.
  5. Remove from heat.
  6. Transfer vegetables to an 11- x 7-inch baking dish coated with cooking spray. Top with fish.
  7. Combine remaining salt, orange rind, and remaining 5 ingredients.
  8. Pour orange mixture over fish.
  9. Bake at 425 for 25 minutes or until fish flakes easily when tested with a fork.
