Ingredients

  • 0.5 cup apricot preserves 
  • tablespoon brown sugar 
  • 2.5 cups vanilla yogurt frozen low-fat
  • 0.5 cup gingersnap cookies coarsely chopped ( 8 cookies)
  • tablespoon juice of lemon 
  • tablespoon butter cut into small pieces reduced-calorie
  • 0.3 cup orange juice unsweetened
  • 32 ounce pear halves in juice drained canned
  • teaspoons sugar

Directions

  1. Arrange pear halves, cut sides down, in an 11- x 7- x 1 1/2-inch baking dish.
  2. Combine preserves and next 3 ingredients in a small bowl; pour over pear halves.
  3. Combine gingersnaps, brown sugar, and margarine.
  4. Sprinkle over pear mixture.
  5. Bake at 375 for 35 minutes or until lightly browned.
  6. To serve, spoon pear mixture into individual dessert dishes. Top each serving with 1/4 cup frozen yogurt.
