  • ounces feta cheese crumbled
  • 0.3 cup green onions chopped
  • cups torn leaf lettuce 
  • 11 ounce mandarin oranges in syrup light drained canned
  • tablespoon olive oil 
  • cup orange bell pepper strips 
  • tablespoons orange juice concentrate undiluted thawed
  • 0.1 teaspoon salt 
  • pound chicken breast boneless skinless
  • tablespoon vinegar white

Directions

  1. Prepare grill.
  2. Place chicken on a grill rack coated with cooking spray; grill 6 minutes on each side or until done.
  3. Cut into 1/2-inch-thick slices. Set aside.
  4. Combine lettuce and next 5 ingredients (through onions) in a large bowl.
  5. Combine orange juice concentrate, vinegar, oil, salt, and black pepper; stir with a whisk.
  6. Pour juice mixture over lettuce mixture, tossing to coat. Divide lettuce mixture evenly among 4 plates; top evenly with chicken, oranges, and almonds.
