Ingredients

  • 1.5 pounds chicken breast tenders 
  • cups rotini cooked uncooked ( 1 pound corkscrew pasta)
  • teaspoons ginger fresh grated peeled
  • 0.3 cup green onions chopped
  • teaspoon ground coriander seeds 
  • tablespoon honey 
  • tablespoons juice of lemon fresh
  • 0.3 cup soya sauce low-sodium
  • tablespoons olive oil 
  • 0.5 cup orange juice 
  • cup orange sections chopped

Directions

  1. At home, combine first 9 ingredients in a large heavy-duty zip-top plastic bag, and seal.
  2. Place chicken and cooked pasta in separate large heavy-duty zip-top plastic bags; seal.
  3. At campsite, add chicken to marinade; seal bag. Marinate in cooler 3 hours.
  4. Heat a large cast-iron skillet over hot coals (or over medium-high heat if at home).
  5. Add the chicken mixture, and cook 15 minutes.
  6. Add pasta, and simmer 5 minutes or until the chicken is done and the pasta is thoroughly heated.
