  • 2.8 cups flour all-purpose
  • teaspoon ground ginger 
  • tablespoon orange juice concentrate undiluted thawed
  • tablespoons orange rind grated
  • 0.3 teaspoon salt 
  • 0.3 cup sesame seed 
  • cup sugar 
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 32
  2. Combine first 7 ingredients in a bowl. Stir well; set aside.
  3. Combine eggs, egg white, vanilla, orange rind, and orange juice in a large bowl, and stir with a whisk.
  4. Add flour mixture, and stir until well-blended.
  5. Turn dough out onto a baking sheet coated with cooking spray. Shape dough into two 13-inch-long rolls; flatten to 1-inch thickness.
  6. Bake at 325 for 25 minutes or until firm to the touch.
  7. Remove rolls from baking sheet; let cool 10 minutes on a wire rack.
  8. Reduce oven temperature to 27
  9. Cut each roll diagonally into 18 (1/2-inch) slices.
  10. Place slices, cut sides down, on baking sheet.
  11. Bake at 275 for 40 minutes (cookies will be slightly soft in center but will harden as they cool).
  12. Remove from baking sheet; let cool completely on wire rack.
