Ingredients

  •  carrots cut into matchsticks
  • teaspoons ginger freshly grated
  • 0.3 teaspoon ground pepper 
  • 0.3 cup orange juice fresh
  • teaspoons orange zest grated
  • tablespoons peanut butter 
  • tablespoon sesame oil toasted
  • tablespoons sesame oil toasted
  • 1.5 pounds shrimp deveined peeled
  • cup snow peas 
  • 10 ounce soba noodles 
  • tablespoons soya sauce

Directions

  1. Combine first 7 ingredients in a large bowl.
  2. Boil noodles according to package directions. Before draining, add snow peas and carrot.
  3. Let cook 30 seconds.
  4. Drain pasta, peas, and carrot, and toss immediately with orange juice mixture. Set aside.
  5. Brush shrimp with sesame oil, and grill over medium-hot coals 3 to 5 minutes.
  6. Arrange pasta on serving plates, and top with shrimp.
