Ingredients

  • 0.5 teaspoon pepper black freshly ground
  •  garlic cloves crushed
  • tablespoons ground coriander 
  • tablespoon lemon rind grated
  •  lemons halved
  • teaspoon olive oil 
  • tablespoons oregano dried
  • teaspoon salt 
  • 12 pound turkey fresh thawed

Directions

  1. Preheat oven to 35
  2. Remove and discard giblets and neck from turkey. Rinse turkey with cold water, and pat dry. Trim excess fat.
  3. Brush oil over turkey.
  4. Combine oregano, coriander, lemon rind, salt, and pepper in a bowl. Rub mixture over skin.
  5. Place garlic and lemon in cavity; tie ends of legs together with cord. Lift wing tips up and over back; tuck under turkey.
  6. Place turkey, breast side up, on a broiler pan coated with cooking spray.
  7. Bake at 350 for 1 hour, and cover breast with foil.
  8. Bake an additional 2 hours or until a thermometer inserted in thigh registers 18
  9. Let stand 10 minutes.
