Ingredients

  • cup corn flakes cereal crushed
  • 1.5 teaspoons creole seasoning salt-free
  • ounce farm-raised catfish fillets 
  • 0.3 cup mayonnaise fat-free
  • 0.5 teaspoon hot sauce 
  • tablespoon juice of lemon 
  •  lemon wedges 
  • 0.1 teaspoon salt

Directions

  1. Preheat oven to 45
  2. Combine first 3 ingredients in a small bowl, stirring well; set aside.
  3. Combine mayonnaise, lemon juice, and hot sauce, stirring well.
  4. Brush mayonnaise mixture evenly over both sides of fillets; dredge in cereal mixture.
  5. Place fillets on rack of a broiler pan coated with cooking spray.
  6. Bake at 450 for 18 minutes or until fish flakes easily when tested with a fork.
  7. Serve with lemon wedges.
