  • 1.5 teaspoons pepper black freshly ground
  • 2.5 cups corn flakes/bran flakes crushed finely (such as Kashi 7-Grain Flakes)
  • 1.5 tablespoons canola oil 
  • pound chicken breast 
  • large eggs lightly beaten
  • 0.3 cup flour all-purpose
  • teaspoon juice of lime fresh
  • 0.5 teaspoon soy sauce 
  • 0.3 cup mayonnaise 
  • 1.5 teaspoons paprika 
  • 0.3 teaspoon salt 
  • teaspoons sriracha such as huy fong) hot
  • tablespoon water

Directions

  1. To prepare sauce, combine the mayonnaise, Sriracha, lime juice, and soy sauce in a small bowl, stirring with a whisk. Cover and chill.
  2. To prepare chicken, combine flour, black pepper, and paprika.
  3. Place flour mixture in a shallow dish.
  4. Combine eggs and 1 tablespoon water; place in another shallow dish.
  5. Place crushed cereal in another shallow dish.
  6. Sprinkle chicken evenly with salt. Working with 1 piece at a time, dredge chicken in flour mixture. Dip in egg mixture; dredge in cereal.
  7. Heat a large skillet over medium-high heat.
  8. Add oil to pan, swirling to coat.
  9. Add chicken pieces to pan; cook 2 minutes on each side or until done.
  10. Serve immediately with sauce.
