  • 0.5 teaspoon pepper black freshly ground
  • 16 ounce chicken breast halves 
  • ounces skin-on chicken drumsticks 
  • 12 ounce chicken thighs 
  • 1.3 cups warm mole sauce 
  • 0.3 teaspoon salt

Directions

  1. Preheat oven to 35
  2. Sprinkle chicken with salt and pepper.
  3. Heat a large ovenproof nonstick skillet over medium-high heat. Coat pan with cooking spray.
  4. Add chicken breasts to pan; cook 5 minutes, turning occasionally.
  5. Add chicken thighs and drumsticks to pan; cook 5 minutes, turning occasionally.
  6. Bake at 350 for 30 minutes or until done, turning halfway through cooking time.
  7. Spoon 1 tablespoon pan drippings into Mole Sauce.
  8. Serve sauce with chicken.
  9. Garnish with lime wedges and cilantro, if desired.
