Combine the first 5 ingredients in a medium microwave-safe bowl, and toss well. Cover with plastic wrap, and microwave at HIGH 12 minutes or until tender. Cool 5 minutes.
Place apple mixture in a food processor, and process until smooth. Stir in 1/8 teaspoon salt.
Heat oil in a large nonstick skillet over medium-high heat.
Sprinkle pork on both sides with 1/4 teaspoon salt and pepper; add to pan. Cook 4 minutes on each side or until pork is done.
