  • 0.3 cup apricot preserves 
  • 0.3 teaspoon pepper black freshly ground
  • teaspoons chili powder 
  • 0.3 cup cilantro leaves fresh chopped
  • teaspoon ground coriander 
  • 0.5 teaspoon ground cumin 
  • cups nectarines peeled sliced
  • teaspoon olive oil 
  • tablespoons oregano fresh chopped
  • 0.5 teaspoon paprika 
  • ounce pork loin cutlets 
  • 0.5 cup bottled salsa 
  • 0.3 teaspoon salt

  1. Combine first 6 ingredients; rub mixture over both sides of pork.
  2. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.
  3. Add pork, and saut 2 minutes on each side or until done.

  5. Add salsa and preserves to skillet, and bring to a boil. Cook 1 minute. Stir in the nectarine slices, cilantro, and oregano, and cook mixture 1 minute or until thoroughly heated.
  6. Serve salsa with pork.
