Ingredients

  • 0.5 pound belgian endive separated
  • 0.3 teaspoon pepper black freshly ground
  • tablespoons chives fresh minced
  •  optional: lemon 
  • 10  parsley sprigs 
  • 0.3 teaspoon salt 
  • tablespoons shallots minced
  • 0.5 pound shrimp 
  • 2.5 cups snow peas trimmed
  • servings tarragon dressing 
  • cups water

Directions

  1. Combine the first 6 ingredients in a medium saucepan, and bring to a boil. Cook 5 minutes.
  2. Add shrimp, and cook for 3 minutes or until shrimp are done.
  3. Drain liquid, discarding solids. Peel and devein shrimp.
  4. Steam snow peas, covered, 3 minutes or until tender.
  5. Combine shrimp, snow peas, chives, and Tarragon Dressing in a large bowl.
  6. Serve on endive-lined plates.
