  • ounce manchego cheese cut into twenty 1 1/2 x 1/4 x 1/4-inch strips
  • 20  medjool dates 
  • 20  mint leaves fresh whole
  • 12 ounce pancetta italian thinly sliced ( bacon)

Directions

  1. Cut small slice off 1 short end of each dateand discard. Using tweezers or needle-nosepliers, carefully remove pits from datesthrough small opening; discard pits.
  2. Place 1mint leaf across opening of 1 date, coveringcavity. Using 1 cheese strip, push mint leafand cheese into date cavity. Using fingers,pinch date opening closed. Repeat withremaining dates, mint leaves, and cheesestrips. Wrap 3 pancetta slices securelyaround each date, enclosing date completely.
  3. Place pancetta-wrapped dates on bakingsheet, spacing slightly apart. DO AHEAD: Canbe made 1 day ahead. Cover and refrigerate.
  4. Preheat oven to 375°F.
  5. Bake datesuncovered until pancetta is crisp andbottoms of dates caramelize, about 30minutes. Using tongs, transfer dates toplatter and serve warm.
