Ingredients

  • teaspoons capers 
  • 0.8 cup chickpeas (garbanzo beans)
  •  garlic cloves minced
  • tablespoons juice of lemon 
  • teaspoons olive oil 
  • 0.1 teaspoon pepper 
  • cups torn spinach 
  • ounce submarine rolls 
  • tablespoon water 

Equipment

  • bowl
  • frying pan

Directions

  1. Place first 4 ingredients in a food processor, and process until smooth, scraping sides of processor bowl occasionally. Set aside.
  2. Heat oil in a large nonstick skillet over medium heat.
  3. Add garlic, and saut 1 minute.
  4. Add spinach; saut 1 minute.
  5. Remove skillet from heat, and stir in pepper.
  6. Slice each roll in half horizontally.
  7. Spread chickpea mixture over bottom halves of bread. Top with spinach, and cover with top halves of bread.
