  • 0.8 cup parsley fresh chopped
  • servings pepper freshly ground
  • tablespoon juice of lemon fresh
  • teaspoon lemon zest finely grated
  • 0.5 cup olive oil 
  • ounces parmesan finely grated
  • teaspoon pepper red crushed
  • pounds yukon gold potatoes halved

Directions

  1. Place a rack in upper third of oven; preheat to400°F. Toss potatoes and oil in a large bowl;season with salt and pepper.
  2. Place potatoes,cut side up, on a wire rack set inside a rimmedbaking sheet; reserve bowl. Roast until goldenbrown and cooked through, 30–35 minutes.
  3. Transfer to bowl; toss with Parmesan. Returnpotatoes to rack and roast until Parmesan isbrown and crisp, 10–12 minutes.
  4. Toss potatoes in same bowl withparsley, lemon juice, and red pepper flakes.Top with lemon zest just before serving.
