  • 1.5 lbs fuji apples cored peeled roughly chopped

  • 0.3 cup crème fraîche 
  • 0.5 cup half-and-half 
  • 0.5 teaspoon kosher salt 
  •  leeks white roughly chopped
  • cups chicken broth reduced-sodium
  • lb parsnips peeled roughly chopped
  •  shallots quartered
  • 0.3 teaspoon pepper white
