  • ounce angel hair pasta refrigerated
  • pound asparagus 
  • tablespoons balsamic vinegar 
  • 12 ounce grilled chicken strips (such as Louis Rich)
  •  green onions cut into 1-inch pieces
  • ounce pre mushrooms 
  • tablespoons olive oil 
  • 0.5 cup preshredded parmesan cheese fresh
  • 0.5 teaspoon pepper 
  • tablespoons water hot

Directions

  1. Preheat oven to 45
  2. Snap off tough ends of asparagus, and cut asparagus into 2-inch pieces. Arrange asparagus, mushrooms, and green onions in a single layer on a broiler pan coated with cooking spray.
  3. Bake at 450 for 8 to 10 minutes or until golden brown, stirring once.
  4. Cook pasta according to package directions, omitting salt and fat.
  5. Drain, reserving 3 tablespoons pasta water.
  6. Add roasted vegetables, reserved pasta water, and chicken to pasta; toss gently.
  7. Combine olive oil, 2 tablespoons hot water, balsamic vinegar, and pepper; stir well with a whisk.
  8. Add to pasta mixture, and toss well.
  9. Sprinkle with cheese.
  10. Serve immediately.
