Ingredients

  • 0.5 cup brown sugar packed
  • 0.5 cup cilantro leaves fresh chopped
  • tablespoons ginger fresh minced peeled
  •  jalapeno minced seeded
  • tablespoons juice of lime fresh
  • 1.8 pounds peaches peeled chopped
  • 1.5 cups onion red finely chopped
  • 0.5 teaspoon salt 
  • 0.5 cup citrus champagne vinegar

Directions

  1. Combine first 6 ingredients in a saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes. Stir in jalapeo. Simmer, uncovered, 5 minutes.
  2. Remove from heat; stir in cilantro and juice. Cool to room temperature.
