Ingredients

  • pounds chicken leg-thigh quarters separated
  • 0.5 cup creamy peanut butter 
  • 0.5 cup breadcrumbs dry fine
  •  garlic cloves minced
  • 0.3 teaspoon ground pepper red
  • tablespoons honey 
  • tablespoon juice of lemon fresh
  • tablespoon lemon rind grated
  • ounce honey-roasted peanuts 
  • teaspoon salt 
  • tablespoons soya sauce

Directions

  1. Place chicken in a shallow dish or large heavy-duty zip-top plastic bag.
  2. Stir together peanut butter and next 4 ingredients.
  3. Pour mixture over chicken; cover or seal, and chill 30 minutes, turning occasionally.
  4. Remove chicken from marinade, discarding marinade.
  5. Process peanuts and remaining ingredients in a blender until mixture is crumbly.
  6. Place crumbs in a heavy-duty zip-top plastic bag; add chicken, and seal. Shake to coat.
  7. Place chicken in a lightly greased 13- x 9-inch baking dish.
  8. Bake at 375 for 45 minutes or until done.
