Ingredients

  • teaspoons dijon mustard 
  • tablespoon basil fresh chopped
  • tablespoons mint leaves fresh chopped
  • teaspoon coarsely ground pepper 
  • tablespoon jalapeno seeded finely chopped
  • tablespoon juice of lemon 
  • 0.3 cup onion red finely chopped
  • 24 ounce salmon fillet thick ()
  • cups tomatoes chopped

Directions

  1. Combine first 6 ingredients in a bowl.
  2. Place salmon on a broiler pan coated with cooking spray; spread each fillet with 1/2 teaspoon mustard.
  3. Sprinkle with pepper. Broil 10 minutes or until desired degree of doneness.
  4. Let stand 2 minutes.
  5. Serve with minted tomato salsa.
  6. Garnish with fresh mint, if desired.
  7. Note: Salsa can be made ahead and refrigerated for up to one week.
