  • large egg whites room temperature
  • 0.1 teaspoon kosher salt 
  • 0.1 teaspoon peppermint extract 
  • 0.5 cup powdered sugar 
  • 12 drops food coloring red
  • 0.3 cup sugar

Directions

  1. Preheat oven to 200°F. Line a baking sheetwith parchment paper. Using an electricmixer, beat egg whites and salt on medium-highspeed until white and foamy, about1 minute. With mixer running, gradually addsugar in 3 additions, beating for 2 minutesbetween each addition. Beat until firmpeaks form, about 2 minutes longer.
  2. Addpowdered sugar and peppermint extract;beat to blend, about 1 minute.
  3. Dot coloring over surface of meringue;do not stir (the coloring will form swirlswhen piped). Spoon meringue into a pastrybag fitted with a 1/2" tip. (alternatively, spoon into a plastic freezerbag, then cut 1/2" off 1 corner.) Twist top;pipe 1" rounds onto prepared sheet, spacing1" apart.
  4. Bake meringues until dry, about2 1/2 hours.
  5. Let cool completely, about1 hour (meringues will crisp as they cool).DO AHEAD: Can be made 2 days ahead.Store airtight at room temperature betweensheets of parchment or waxed paper.
