  • tablespoons flat-leaf parsley chopped
  • cloves garlic crushed
  •  bell peppers green seeded sliced lengthwise
  • tablespoons olive oil extra-virgin
  • 0.3 cup parmesan grated
  • large bell pepper red seeded sliced lengthwise
  • servings salt and pepper 

Equipment

  • aluminum foil

Directions

  1. Heat a skillet over medium high heat.
  2. Add extra-virgin olive oil, crushed garlic and peppers. Season with salt and pepper.
  3. Saute until just tender, 6 or 7 minutes.
  4. Sprinkle in cheese and remove from heat.
  5. Transfer peppers to a platter.
  6. Garnish with chopped parsley. Cover with foil to keep warm until ready to serve.
