  •  anjou pear cored peeled cut lengthwise into 1/4-inch-thick slices
  • ounces asiago cheese grated
  • cups baby spinach loosely packed ()
  • 0.3 cup balsamic vinegar 
  • 0.1 teaspoon pepper black freshly ground
  • 0.3 teaspoon sea salt 
  • tablespoons olive oil extra virgin extra-virgin
  • 0.5 cup bell pepper red cut into fine dice
  • tablespoons shallots minced
  • 10 slices bacon thick-cut cut into large dice

Directions
