There’s something undeniably satisfying about perfectly roasted potatoes — golden, crispy on the outside, fluffy on the inside, and packed with flavor. This dairy-free recipe takes the humble roastie to the next level using a combination of rich goose or duck fat and a touch of oil for that irresistible crispness. If you’re aiming to impress at your next dinner or just want a comforting side dish, these roast potatoes hit all the right notes.

Choosing the right potato is the secret to success here. Varieties like Desirée, King Edward, or Maris Piper hold their shape beautifully, ensuring each piece stays firm inside with a delightfully crunchy crust. The brief boil before roasting preps the potato’s surface, so when tossed with a light sprinkle of flour and plunged into sizzling fat, they develop that coveted rustic roughness that crisps to perfection in the oven.

Although the cooking time calls for a bit of patience at around 70 minutes, the process is hands-off enough for you to focus on other kitchen tasks or relax. The careful turning and reheating between roasting stages ensure each side gets equal attention and results in a uniformly crunchy finish. Paired with your roast meat or veggies, these potatoes transform any meal into a memorable feast without relying on dairy.

Whether you’re cooking for a large group or just want to elevate your weekday dinner, this recipe’s simple technique and luxurious fat-based crisping guarantee roast potatoes that will have everyone asking for seconds.

Ingredients

  • 16  potatoes good
  • tbsp flour plain
  • 140 goose fat
  • tbsp vegetable oil

Equipment

  • sauce pan
  • oven
  • kitchen timer
  • colander

Directions

  1. Heat oven to 190C/fan 170C/gas
  2. Peel the potatoes and cut in half; if very large, cut into quarters, or leave whole if they are small. Tip into a saucepan, cover with cold water, then bring to the boil. Set the timer and boil for exactly 2 mins.
  3. Drain the potatoes well, then toss in the colander to fluff up their surfaces, sprinkling over the flour as you go.
  4. Place a large, sturdy roasting tray over a fairly high heat, then tip in the fat and oil. When sizzling, lower in the potatoes carefully, then gently brown in the hot fat for about 5 mins so all the sides are covered with oil.
  5. Roast undisturbed for 20 mins, then remove from the oven and gently turn them over with a fish slice.
  6. Place the tray on the hob to heat the oil, then return to the oven and cook for another 20 mins. Turn again, putting the tray back on the hob to heat the oil. Give them a final 20 mins in the oven, by which time you should have perfect roast potatoes.
