  • pounds green beans trimmed
  • tablespoons olive oil 
  • 0.5  onion red sliced
  • 0.3 cup red wine vinegar 
  • 10 servings salt and pepper

Directions

  1. Bring a pot of salted water to a boil.
  2. Add beans and cook until crisp-tender, 4 minutes.
  3. Drain; pat dry.
  4. In a bowl, toss beans with vinegar, onion, salt and pepper; chill for 45 minutes. Toss with herbs and olive oil. Cover; chill for 4 hours, stirring often.
