  • small onion red halved thinly sliced
  • tablespoons sugar 
  • 0.3 cup citrus champagne vinegar

Directions

  1. Combine first 3 ingredients in a small saucepan over medium-high heat. Bring to a boil, stirring until salt and sugar dissolve.
  2. Remove from heat.
  3. Add onion to vinegar mixture.
  4. Let sit at room temperature at least 2 hours, stirring occasionally.
