Ingredients

  • 11 ounce mandarin orange segents drained canned
  • 15 ounce pineapple crushed undrained canned
  • large eggs 
  • 0.5 cup pecans chopped
  • 12 servings garnish: pecans chopped
  • 3.4 ounce vanilla pudding mix instant
  • 0.3 cup vegetable oil 
  • 0.3 cup water 
  • 12 ounce non-dairy whipped topping frozen thawed
  • 18.3 ounce duncan hines classic decadent cake mix yellow

Directions

  1. Beat first 4 ingredients in a large bowl at medium speed with an electric mixer until blended. Stir in oranges.
  2. Pour batter into 3 greased and floured 8-inch round cakepans. (
  3. Layers will be thin.)
  4. Bake at 350 for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes; remove layers from pans, and let cool completely on wire racks.
  5. Stir together crushed pineapple and next 3 ingredients.
  6. Spread pineapple mixture evenly between layers and on top of cake. Chill cake 3 to 4 hours.
  7. Garnish, if desired. Store cake in refrigerator.
