Ingredients

  • 1.3 cups graham cracker crumbs ( 16 squares)
  • 0.3 cup soybean oil melted ()
  • tablespoon sugar 
  • cups vanilla softened reduced-fat
  • oz pineapple rings crushed undrained canned
  • teaspoons rum extract 
  • teaspoons coconut extract 
  • 0.3 cup coconut flakes flaked toasted

Directions

  1. Heat oven to 350°F. In small bowl, mix cracker crumbs, butter and sugar. Press into ungreased 8-inch square (2-quart) glass baking dish.
  2. Bake about 10 minutes or until dry. Cool completely, about 1 hour.
  3. In large bowl, beat ice cream, pineapple with juice and extracts with electric mixer on low speed just until blended.
  4. Spread in baked crust. Freeze about 6 hours or until firm.
  5. Remove dessert from freezer about 5 minutes before serving.
  6. Sprinkle coconut over top.
