  • teaspoons butter melted reduced-calorie
  • 0.1 teaspoon pepper 
  • 0.3 cup pinenuts toasted
  • 0.3 teaspoon salt 
  • 24 ounce skinned snapper white red firm
  • ounce bread white

Directions

  1. Preheat oven to 40
  2. Place bread in a food processor; process until crumbs are fine.
  3. Add pine nuts; pulse just until pine nuts are finely chopped.
  4. Place breadcrumb mixture in a shallow dish.
  5. Place egg white in a shallow bowl; beat with a whisk.
  6. Sprinkle salt and pepper over fish. Dip fish in egg white; dredge in breadcrumb mixture.
  7. Place fish fillets on a baking sheet coated with cooking spray, and drizzle margarine over fish.
