Ingredients

  • teaspoon double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • 0.5 cup brown sugar packed
  • 1.5 cups powdered sugar 
  •  eggs 
  • cups flour all-purpose
  • 0.3 cup orange juice 
  • teaspoons orange zest 
  • 0.5 cup pineapple rings with juice crushed
  • teaspoon salt 
  • 0.5 cup shortening 
  • teaspoon vanilla extract 
  • 0.5 cup granulated sugar white

Directions

  1. Cream brown sugar, white sugar, shortening, and salt. Stir in egg.
  2. Sift together 2 cups flour, baking soda and baking powder. Stir into sugar mixture and mix well.
  3. Add pineapple, chopped nuts (optional) and vanilla.
  4. Mix well.
  5. Drop by teaspoonfuls on greased cookie sheet.
  6. Bake at 350 degrees F (180 degrees C) for 8 - 10 minutes. Frost when cooled.
  7. Mix confectioners' sugar, orange juice, and grated orange rind.
  8. Mix together until smooth and drizzle on cooled cookies.
