Ingredients

  • inch ginger fresh chopped
  • 10 servings ice cubes crushed
  • 1.3 cups juice of lime fresh
  • 1.5 teaspoons lime rind grated
  • 46 oz pineapple juice unsweetened canned
  • 1.5 cups sugar 
  • 1.5 cups water

Directions

  1. Bring first 5 ingredients to a boil, stirring until sugar dissolves. Reduce heat, and simmer 8 minutes.
  2. Remove from heat; let stand 1 hour.
  3. Pour pineapple juice mixture through a wire-mesh strainer into a large pitcher, discarding ginger. Stir in lime rind, and, if desired, rum.
  4. Serve over crushed ice.
