Ingredients

  •  chicken breast halves boneless with skin (1 3/4 pounds total)
  • tablespoons brown sugar packed ()
  • tablespoons cilantro leaves fresh chopped
  • 0.8 cup seasoning cubes fresh
  • 1.5 tablespoons jalapeno canned drained sliced coarsely chopped
  • 0.3 cup pineapple juice 
  • tablespoons bell pepper diced red finely
  • 1.5 tablespoons onion red finely chopped
  • tablespoon mustard yellow

Directions

  1. Preheat oven to 400°F. Bring pineapplejuice, brown sugar, and mustard to boil insmall saucepan, stirring to dissolve sugar.Boil until glaze has thickened slightly, about1 minute. Season with salt and pepper.
  2. Mix pineapple, red pepper, cilantro,onion, and chiles in medium bowl. Seasonwith salt and pepper.
  3. Line baking sheet with foil.
  4. Placechicken on sheet and brush with glaze.
  5. Bake 15 minutes.
  6. Brush again with glaze,then broil until cooked through and golden,watching closely to avoid burning, about5 minutes longer.
  7. Let rest 5 minutes.
  8. Spoon salsa over chicken and serve.
